Trench cake was made on the home front by friends and family to send to soldiers. It is a little unusual for a cake as it doesn't include any eggs, because of shortages, and does include vinegar! The vinegar was added to react with the bicarbonate of soda to make the cake rise. It is a dense and heavy cake designed to last as well as taste good!

  • 225 grams Plain flour
  • 110 grams Margarine
  • 75 grams Currants
  • 75 grams Brown sugar
  • 2 tbsp Cocoa powder
  • 1/2 tbsp Ground nutmeg
  • 1/2 tbsp Ground ginger
  • 1/4 pint Milk
  • 1/2 tbsp Bicarbonate of soda
  • 1 tbsp Vingegar
  1. Rub butter into flour until resembles breadcrumbs

  2. Add the rest of the dry ingredients

  3. Add vinegar and bicarbonate of soda to milk

  4. Add the milk/vingegar mixture to the dry ingredients and mix well

  5. Put the mixture into a cake tin and bake for 1hr 15 mins
