Chocolate Cake

Moira Copland tried out a First World War chocolate cake with overwhelmingly popular reviews! 

Ingredients
  • 2 squares bitter chocolate
  • 2 tbsp butter
  • 1 cup sugar
  • 1 beaten egg
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup cold water
  • 1 tsp vanilla
Icing
  • 2 cups icing sugar
  • 1 tbsp butter (heaped - about the size of an egg)
  • 1 egg (unbeaten)
  • 1 tsp vanilla
  • 1/4 tsp salt
Instructions
  1. Melt chocolate and butter together, add sugar and beaten egg.

  2. Sift dry ingredients and add to the chocolate mix. 

  3. Add water and vanilla and beat well. The batter will be very thin.

  4. Pour into a greased 8 - 9 inch pan and bake in moderate oven (325 - 350F) for 30 - 35 minutes.

Icing
  1. Blend melted butter and sugar together.

  2. Add egg, vanilla and salt.

  3. Beat until light and fluffy.
