Beetroot Rock Cakes

A rock cake recipe is based on a recipe from Mrs C.S. Peel's 'The Victory Cookery Book' published in 1918. We have borrowed it from Arundel Museum's 'Taste of the Home Front' recipe book.

Ingredients
  • 230 g mashed potato
  • 110 g rice flour
  • 80 ml milk
  • 1 egg
  • 110 g self-raising flour
  • 55 g sugar
  • 55 g diced beetroot
Instructions
  1. Mix the potato and rice flour the night before or at least a few hours before

  2. Add the remaining ingredients, lightly mixing in

  3. Using two teaspoons, place small mounds of the mixture onto a baking sheet

  4. Bake in the oven for twenty minutes at 180 degrees or gas mark 4
